Blueberry Chicken Salad

Blueberry Chicken salad - Creamy 




➡️ INGREDIENTS 

  • 2 Cups of Fresh Blueberries 
  • 12 Ounces Shredded Skinless - Boneless Rotisserie chicken } About 3 Cups 
  • 1/2 Cup of Thinly Vertically Sliced Red onion 
  • 1/2 Cup of Plain 2% Reduced Fat Greek Yogurt 
  • 1/3 Cup of Diced Celery 
  • 1/2 Teaspoon Of Kosher salt - Divided 
  • 2  1/2 Table spoons of Fresh Lemon juice - Divided 
  • 1/4 Cup of Torn Fresh Basil 
  • 2 Teaspoons of Extra virgin Olive oil 
  • 1 Table spoon of Honey 
  • 1 } 5 Ounces - Package Baby Arugula 
  • 1/4 Tea spoon of Freshly Ground Black pepper 

In a Medium Bowl - Combine onion , Diced Celery , Torn fresh basil and Chicken. 
Sprinkle with 1/4 Tea spoon Salt. 

In a Small bowl Mix Together Honey , Yogurt and 1 Table spoon of Lemon juice.  
Stirring with a Whisk.

Add Yogurt Mixture to Chicken Mixture - Toss to coat.
Gently stir in Blueberries. 
Place Arugula ; Remaining 1  1/2 Table spoons Lemon juice , Remaining 1/4 Teaspoon salt , Oil and Pepper in a Bowl ,
Toss to coat. 

Divide Arugula Mixture Evenly Among 4 or 6 Plates.
Top Each Serving with about 3/4 Cup of Chicken Mixture.
