Chocolate Ice cream - Keto

Keto Chocolate ice cream [Low Sugar] 


⏺ Ingredients 


  • 6 Large Egg Yolks 
  • 1/2 Cup of Unsweetened Cocoa Powder 
  • 1/2 Tea spoon of Kosher Salt 
  • 3 Cups of Heavy Cream 
  • 2 Teaspoons Vanilla Extract 
  • 6 Table spoons of Pure Stevia Sweetener 

Take a Medium Sauce Pan and Add the Cocoa Powder and Heavy Cream. 
Then Whisk it Until the Cocoa is Fully incorporated. 

Set Over Medium heat and Bring to a Simmer - Stirring occasionally. 
Remove it From Heat.

Take a Large Bowl and Whisk - Egg Yolks , Stevia , Salt and Vanilla - Together Until Lightened in Colour About - 1 Minute.

Slowly Drizzle in 1 Cup of the Hot Cream Mixture - Whisking. 
Then Pour the Mixture Back into the Sauce Pan and Keep ut Over Medium heat. 
Cook - Stirring Continuously with a Rubber Spatula - Until the Mixture Thickens , Coats the Back of a Spoon and Reaches 180 Degrees F on a Thermometer About 6 Minutes. 

Transfer the Custard to a Large Bowl anf Stir Continuously Until the Mixture Cools to Room Temperature. 

Cover Tightly with Plastic Wrap and Keep Until Cold About 3 Hours. 

Then Freeze the Mixture in An Ice cream Maker According to the Manufacturers Instructions. 

Transfer to a Freezer Safe Resealable Container and Freeze Until it Set - At least 1 Hour.
